Vermentino DOC 100%
Vermentino, the queen grape of the Maremma coast, is the heart of the most representative white of the DOC Maremma Toscana. We interpret it by seeking a balance between maturation and alcohol content, focusing on a distinctive acidity and more restrained alcohol levels (when possible, depending on the year). Every harvest reflects the artisanal authenticity of our labels and tells the complexity of the season. The grapes, hand-harvested and pressed whole, follow different winemaking processes depending on the clone and parcel of origin. Fermentation, slow and at 14-15°C, takes place in steel tanks, following a cold clarification of the must to enhance its aromatic potential. The batches are kept separate until the final blending, with weekly stirring of the lees to add complexity and minerality to the taste. Our choice of wines with lower alcohol content was made to meet the needs of the restaurant industry and surpass the excessive emphasis on alcohol typical of the 1990s.

Viognier DOC 100%
We follow the same production approach as for Vermentino: manual harvest, soft pressing, and aging on fine lees. However, Viognier stands out for its greater aromaticity and structure. On the nose, it recalls a blend of Sauvignon and Chardonnay, with intense aromas, while on the palate it is sapid and full-bodied, with a light tannic note due to the thick skins. Although naturally low in acidity, an early harvest allows us to obtain a well-balanced wine, avoiding excessive alcohol content. Our Viognier expresses its best on stony, mineral soils, perfectly in tune with the character of our tenuta.

Ciliegiolo DOC 100% - vinified in red
Ciliegiolo, a red grape variety with a young and dynamic character.
Along with Vermentino, it represents Maremma’s bet to renew and boost the denomination.
Our Ciliegiolo stands out for its intense and bright color, and on the palate, it bursts with red fruit, berries, and spices, accompanied by excellent minerality and freshness. On the nose, the aromas mirror the taste, while the tannins are soft and integrated. This coastal red wine is versatile and also perfect for pairing with fish, making it more drinkable than traditional Tuscan reds. The grapes, hand-harvested, are destemmed and carefully selected before fermentation, which lasts 14-16 days with the skins in contact with the must. The wine is then aged for at least 8 months in 500-liter French oak tonneaux, without the use of new wood to avoid overpowering the character of the Ciliegiolo, enriching it with additional organoleptic nuances.

Ciliegiolo DOC 100% - vinified in rosé
Our Ciliegiolo rosé is a wine that aims for the lightness and freshness of a white. The grapes, among the first to be harvested, are treated as if they were white grapes, allowing us to obtain a pale pink color, far from the traditional style of Italian rosés and closer to the Provençal one. On the nose, there are hints of red fruit, while on the palate it is fresh and lively like a white wine.
Ciliegiolo, with its ability to preserve acidity and offer aromatic wines, is perfect for this style and is winning over an increasingly young audience.
It is a coastal grape, ideal for summer.
